The below recipe is taken from the book "Special Diets for Special Kids" by Lisa Lewis, PhD. and reproduced with permission from the publisher.Basic Bread Machine Loaf1-1/2 tsp Dried Yeast1-1/2 cups White Rice Flour3/4 cup Brown Rice Flour2 tsp Xanthan Gum1 tsp Salt2 tbsp Sugar1/3 cup Dry milk substitute2 Large Eggs3 tbsp Margarine (melted)(or Vegetable Oil)1 tsp Apple Cider Vinegar1 cup Water, warmMix all dry Ingredients in a large bowl. Mix in eggs, margerine, vinegar and water. Stir together just to mix. Place in the oiled bread machine pan. Use the light setting or set programmable machines to one knead and one rise cycle.

        Comments about Xanthan Gum, 6 oz:

        xanthan gum cannot be substituted for any flour. it is a product used in a teaspoon amount for making gooey halva etc not for cake making. I don't think it was chewed and sent by someone.
